Something we all ask: Why is your ice cloudy?

I came across a great article on Medium this week titled: Why is your ice cloudy? I couldn't help but agree that this is a question I find myself asking bartenders (silently) every time I go somewhere without an established ice program. This article is asking the question from a much more scientific angle.... no really... technically why is your ice cloudy? The bulk of the explanation is here:
Cloudy ice is most often caused by dissolved gases–mainly nitrogen and oxygen– that come out of water during the freezing process. Tap water also contains dissolved minerals–generally calcium and magnesium–which can be present in the form of bicarbonates and/or as calcium and magnesium sulphate. We’ll make sure to cover water hardness soon — but the short of it is that the sum of magnesium and calcium concentrations in your water is a measure of how “hard” your water is. Hard water can lead to cloudy ice cubes.

Cloudy ice can also form due to hindered structure formation. As water freezes, a thin layer of ice begins to form on its outermost edges and grows inward–forming a crystal lattice structure.

However, other molecules in tap water (such as the impurities and gases we just mentioned) do not fit in the lattice structure. So, if the ice forms faster than the gas molecules can diffuse away, the gases get trapped. Micro-bubbles form as the concentration of gases and impurities in the freezing water becomes supersaturated. These small bubbles get caught in the ice, and voila–you’ve got cloudy ice.

Reliable Tavern in Petworth Is Now Selling Artisanal Ice By the Cube

This is the first time I've heard/seen a tavern selling ice beyond their own use. You can actually bring them home with you. It works like a subscription service for clear ice! Read more here:

​"Co-general managers and bartenders Ben Long and Ben Alt have set up their ice service like a brewery’s growler refill system. On your first visit, you purchase an insulated bag that can carry up to 18 cubes; bring it back for refills, and you’ll get a discount on your ice. With the bag, the two-inch cubes are 10 for $8, 15 for $12, or 18 for $14—80 cents or less each. No bag? Cubes are $1.25 each."

This is a great model for other bars/companies to follow. It seems like a great way to maximize their clear ice program investments!
